Nutty Choco Truffles with Quinoa Puffs


This recipe is my friends and hubby's favourite, it is not only a ball of goodness in itself but it is also nutritious, packed with antioxidants thanks to dark chocolate and due to its quinoa content is considered high in protein and all essential amino acids.

Ingredients:

-300 gr. dark chocolate

- 1 cup of quinoa puffs (I used BioFair)

- 50 gr. of whipped soya cream

- 1/4 cup of mixed ground nuts

Method:

Place chocolate in the top of a double boiler over hot (but not boiling) water and allow to melt.


Then pour soya cream in a bowl and beat with a whisk until it gathers consistency.


Mix melted chocolate, whipped cream and quinoa puffs. Cool the mixture until until you can work with it comfortably.



In the meanwhile, place nuts of your choice in the food processor for a few second and when they are grounded, put on a sifter to get rid of the smaller bits.


Carefully roll into 1-inch balls, using your hands to mold them together and then roll them over the nuts. Enjoy !
