Ingredients:
- 500 ml coconut milk
- 1/2 cup of oats
- 1/2 cup quinoa
- 1 tsp cinnamon powder
- A cinnamon stick
- 1/2 tsp pure vanilla extract
- 2 tbsp maple syrup
- 1 banana sliced
- Mixed berries
Method:
1) Bring the milk to boil in a pot, set over a medium-high heat.
2) Add the oats and quinoa. Once this starts bubbling, reduce the heat and add the cinnamon and vanilla. Simmer with the lid on for 20 minutes then pour in the maple syrup an stir well.
3) Divide the oatmeal between however many portions you want. Top them with sliced banana and fresh berries and drizzle over extra maple syrup to taste =) Enjoy!
