Vegan Laksa


- 1 package of Udon noodles - 2 cans of coconut milk - Half a lime - 1 white or purple onion chopped - 1 pepper - 1 courgette - A chunk of ginger - 1 tbsp garlic chopped - Steamed broccoli - Steamed asparagus - 1 Pak choi - 1 tsp fresh coriander - Spices: 1 tsp of coriander power, 1 tbsp of turmeric powder, 1 tsp of cumin powder, 1 tsp dried chilli, 1 tsp himalayan salt, 1 tsp curry powder - Optional: Curry paste ( 1tsp)


1. Chop vegetables as shown in picture

2. Follow instructions on noodles package to cook them.

3. Fry onion and garlic for aprox 3 minutes, then add courgette, stir and fry for another couple of minutes. Add pepper(capsicum) and pak choi and continue frying and stirring at medium heat and include the spices. Finally pour coconut milk, lemon juice, coriander and noodles, stir, serve and enjoy
