Pasta with creamy vegetable sauce


- Pasta of your choice (I used organic spinach pasta) - Oil of your choice - Grated garlic and ginger to taste ( I used aprox 1 tbsp of each) - 5 big mushrooms - 1 whole pepper (capsicum) - 1 Aubergine (courgette) - 1 onion - 1 chopped tomatoes - Organic Soy or oat cream - 2 tbsp savoury yeast - Handful of steamed broccoli


Follow instructions on the package to cook the pasta.

Then, on a frying pan, add oil, onion, ginger and garlic and fry for approximately 3 minutes, then add courgette and mushrooms and simmer for a couple of minutes and then add the pepper and continue to stir for another minute.

Finally add cream, salt and pepper to taste and also the broccoli and chopped tomato. Stir, add the savoury yeast to give the sauce a cheesy flavour and let the flavours mix together for another minute before you serve and enjoy
