Easy Curry with Caramelised Onion

This is a really easy recipe to make, if you have a few spices at home, cream and any vegetable, you can make this happen =)

Ingredients:

  • 1 bag of vegan Quorn (mushrooms or any vegetable of your choice)

  • 1 onion (chopped in Julianne)

  • 1 tbsp of maple syrup (or to taste)

  • 2 cloves of garlic (finely chopped)

  • 1/2 tsp fresh grated ginger

  • Fresh Rosemary leaves (coarsely chopped)

  • 1 soya cream (or coconut milk)

Spices:

1/2 tsp Garam masala powder

1/2 tsp Cumin powder

1/2 tsp Turmeric powder

1/2 tsp Paprika powder

1/2 coriander powder

Salt & pepper to taste

Method:

1. Heat up coconut oil in a frying pan for a couple of minutes, add chopped onion and fry until soft. Once is soft add maple syrup.


2. On another pan, heat up oil with ginger and garlic for a couple minutes, add chopped rosemary then quorn and fry for approx.10 minutes.


3. On a small bowl, mix spices and add half a cream, stir until spices have blended with the cream and pour this over the pan, fry for a couple more minutes and let the quorn absorb the flavours of the spices as you fry it.


After this, add remaining cream along with the fried onions and stir. You might add a little bit of boiled water if your mixture is getting too dry, cover pan with a lid and simmer for about 6 to 10 minutes stirring once in a while.


Finally, garnish it with fresh coriander and serve with any side of your preference. Enjoy! <3
