Last 18th of Septemeber, it was my country's Independence day so I want to share with you a simple and yummy recipe from Chile, we call it "Humita en olla" which is essentially, corn with basil and spices =)
Ingredients: (2 people)
- 3 big corns
- 1 onion chopped in squares.
- A handful of basil leaves
- 2 big cloves of garlic (grated)
- Salt, pepper,
- 1 tsp. Paprika
Method:
Cut the ears from the corn stalk as shown in the photo. Then add corn and basil leaves to food processor. Process until you have a nice thick mixture.
In a frying pan fry onion, garlic and spices, fry until onion is softer.
In a pot, add corn mixture with a little bit of water (or soya milk), you would want half the amount of water than your corn mixture, simmer for 30 minutes stirring occasionally. When the mixture is thick and consistent, add the fried onions with spices. Serve with any salad, I recommend tomato and onion, they go well with corn =)
Garnish with basil or chopped coriander =) Enjoy!
