Indian Dahl

One of my favourite legumes is lentils; lentils are not only a cheap source of protein, but are also fat-free, high in fiber and rich in a number of essential nutrients. They are a good source of potassium, calcium, zinc, niacin and vitamin K, but are particularly rich in dietary fiber, lean protein, folate and iron.


- 1 cup of red lentils (washed and drained) - 1 cup and a half of cold water - 1 tsp of fresh ginger grated - 1 spoon of chopped garlic - 1 onion chopped in squares - 1 chopped tomato - 1 red chilli - 1 tsp of curry paste (Rojan Josh or any curry paste) - Cumin seeds and mustard seeds to taste - Spices: 1 tsp of each; coriander, cumin powder,turmeric, garam masala.


Wash lentils either in a pot or sifter until the water is clear. Then put in a pot and add water, cover and let it cook for about 20 minutes, stirring from time to time.

In the meanwhile, fry onion along with garlic, ginger, mustard seeds, cumin seeds and tomato and stir fry until onion is soft.

Add spices ( except from garam masala which is best to add at the end) and curry paste to the stew, and once lentils are softer you can add the fried mixture, garam masala and salt to it. To garnish you can use fresh chopped coriander, and I love to eat it with rice and coconut yoghurt on the side =)
