Scrambled Tofu

When I went vegan, egg was one of the hardest things to quit, I really loved the flavour of eggs and found this to be a nice replacement for scrambled eggs, I try not to eat tofu too often but I have this a couple times a week and love it =) 

 

 

Ingredients: (2 people)

 

- 200 grs of organic tofu

- A quarter pepper

- 2 mushrooms

- 1 small tomato 

- 1/2 tsp mixed herbs

- 1 tsp of turmeric powder

- Sea salt to taste

 

Method:

Chop all veggies in small squares. 

Pat dry tofu with paper tofu and smash it apart with hands or spoon, add to non-stick pan along with the mushrooms (no need for oil), then add the herbs and turmeric, stir and fry for a couple minutes. 

 

Once the mushroom looks slightly cooked, add peppers and tomato and fry for 3 more minutes, adding a sprinkle of salt to taste.

 

Serve it on slice of bread of your choice =) The amount of ingredients is enough for 4 slices of  bread to share with whoever is by your side <3 Enjoy
