Creamy Ginger Mushroom with Fried Rice


Ingredients:


- 500 grams of mushrooms - Coconut cream (milk) - 1 tbsp of grated ginger - Half a tbsp of oil of your choice - 2 grated garlic cloves - 1 spring onion (shallot) chopped - 1 big cup of rice cooked and cooled down (left over white rice is perfect for this!) - 2 tbsp of dark soy sauce - 1 pepper (capsicum) chopped - 1 onion chopped in squares - 1 carrot chopped in small pieces - 1 chopped pak choi - Chilli (fresh or dried) - 1 tsp turmeric powder


Method:

Fry onion and chilli in oil until onion is slightly soft, then add chopped pepper and carrot and fry for a few more minutes ( 3-4 mins aprox). Add cold rice, turmeric powder and soy sauce (to taste). Add pak choi at the end and continue frying for another minute.



On a different pan, add garlic, ginger , the white part of the spring onion chopped and the mushrooms. Once the mushrooms are soft, add the green part of the spring onion. Stir, cover and simmer for a couple of minutes. Add coconut cream and a bit of salt to taste
